Our Farm

We cultivate 100 hectares of organically farmed olive groves located in the prized Colli Assisi-Spoleto area, the only one in Italy recognized by FAO as a Globally Important Agricultural Heritage System (GIAHS).

The prevailing variety or cultivar is Moraiolo (70%), followed by Frantoio (20%) and Leccino (10%), for a total of over 25,000 trees. We harvest them all by hand, with the help of simple battery-powered harvesters: we do not resort to mechanized harvesting, which is potentially harmful to our trees and native fauna.

The olive oil is cold extracted using the latest technology and within 24 hours of harvesting. On average, we produce no more than 200 quintals of organic extra virgin olive oil per year.
